 milk 500g

Vanilla extract

butter 30g

egg 1

egg yolks 2

sugar 90g

salt 3g

cake flour 125g

rum 45g

Method:

1/Pour the milk into a saucepan, add a dropof vanilla extract, stir well, and heat until itbegins to bubble. Pour the heated milk intoa bowl, add butter, and stir until completelymelted.

2/In a mixing bowl, combine one whole egg,two egg yolks, sugar, and salt. Mix well, thenpour the mixture into the melted butter andmilk, stirring until well combined.

3/Sift in the cake flour, stir until smoothwithout lumps, sift again, pour in the rum,and mix well Cover the bowl with plastic and refrigerate overnight.

4/Brush the bottom of the mold with meltedbutter. Take out the chilled batter, give it aquick stir, and pour it into a measuring cupfor easier handling.

5/Pour the batter into the mold and bake at200°C for 60-70 minutes.

6/After baking, invert the mold onto a wirerack, let it cool, and then demold. Sprinklewith matcha powder or drizzle withstrawberry sauce.
